The options available are: Daily, Monthly, Weekly, and OFF. If you choose OFF option, you will never be able to get access to old chats if switched to a new phone.

The copy file is named msgstore-YYYY-MM-DD.1.db.crypt, where the capital letters are the date of the backup. The required file must be renamed to msgstore.db.crypt, removing the date from its name. Then install the application again, and you will be prompted to restore all the information.
Chat information is not stored on Whatsapp servers, so you can only restore it from a backup saved in iCloud. You can always do this operation manually to protect yourself from losing important messages.
